I don’t review a lot of website but I could not miss telling you about minimalistbaker.com. It’s a food blog by John and Dana – a husband and wife team in Portland, Oregon. I don’t know them personally but I love their blog. I became a vegan per my doctor’s recommendation after my second baby in order to lose the excess weight and get my health back. It was very difficult for the first year but I started to get used to not having dairy or eggs (I was a vegetarian before so the meat thing didn’t bother me as much). I lost 60 lbs. and felt better than I have in years – there is no going back for me. Websites like Minimalist Baker saved me. Many of their recipes are vegan, require just 10 ingredients or less and many times use just one bowl and 30 minutes or less….and they are delicious. The website is also beautiful and the recipes have amazing photos that explain every step. My kids are meat eaters and love many of the recipes I make from their site. One of our favorites is the Vegan Gluten Free Black Bean Brownies – no you can not taste the beans and yes they taste like real brownies! We also love the Vegan Parmesan Cheese – add some brown rice pasta, a little fresh garlic and ginger and you have an amazing meal even a cheese lover will appreciate!
